Pumpkin and Spice

As a pastry-chef-in-training, I love to eat, entertain and create. I spend a lot of time in the kitchen, and I love sharing new things I find, try and bake. This blog chronicles the adventures I have with food- at home,at school, on vacation and in my career. I’m especially excited to share my adventures this coming fall, as I will be starting a six-month externship as a baker at a luxury ski resort in Utah.

An Egg-Free Dessert

Sorry for the lack of communication lately. My internet connection is terrible, and uploading photos is a bit of a chore. My camera is also acting up, and sometimes decides it just doesn't feel like focusing, and all I get are pictures that look like I smeared Vaseline on my camera lense.

This is my last week at the ski lodge I'm currently working at. The interns Yummy and egg-freemove around from shift to shift and lodge to lodge, to give us an oppertunity to try everything. Only three more working days left until my switch.

This week at the restuarant, we had a guest with an egg allergy that needed a special egg-free dessert. My supervisor, C, told me that I could create the dessert plate. Since soooo many of our dessert items contain eggs, I had to get a little creative. It was a fun challenge.

My egg-free dessert plate featured a layered parfait of fresh berries, organic vanilla yogurt and a dark chocolate drizzle, three strawberries dipped in dark chocolate and drizzled with white chocolate, and two of our egg free truffles (many of our fillings contain yolks)- a margarita truffle and a peanut butter truffle. The executive pastry chef happened to stop by as I was plating it, and remarked on how lovely it was.

I was quite pleased with how it came out. It made for a nice change to the regular routine of the evening, which is usually pretty...well, routine.

About the camera, I'm a little frustrated, as it's maybe six months old. Luckily, I paid a little extra for the super-duper three year service plan. Un-luckily, I bought it at Target, and there is no Target in Park City! Seriously! The closest one is in Salt Lake City, which is only about half an hour/forty five minutes away, but since I have no car, it might as well be on Mars. So, Kyle is mailing me his old camera (which is fine, except that the display screen doesn't work) and I'm mailing him my camera to take to Target. Sigh.

On a happier note, I just bought my plane ticket to go home at the end of the season! Not that I'm not having fun here, but I cannot wait to see Kyle again, and sleep in a big bed again and have a real, genuine kitchen with an oven and a toaster and a dishwasher and my wine fridge... Ahh, I miss home!

Allergic to eggs - that's so sad!! The dessert looks delicious. I especially love the chocolate covered strawberries. Too bad about your camera, but hopefully your replacement comes soon!

That's a bummer about the camera! I am trying to get better about toting mine around with me. Good luck with getting it fixed.

Your dessert did come out lovely. I'm awed but how great your dipped strawberries came out. What's the trick? Anything I dip in chocolate comes out looking like a big clump of chocolate, not so pretty!

I'm so happy you get to go home soon!! Your such a trooper. And that should be interesting making a switch to another lodge! Can't wait to hear all about it. Your dessert is beautiful! Whenever I am dipping things in chocolate I always add a teeny bit of shortening to melt in with the chocolate. It seems to thin it out a little and make it a little glossy. Am I doing a good thing?smilies/grin.gif

Professional bakers & pastry chefs get a slight advantage over the at-home baker when it comes to chocolate. It's called couverture chocolate- an ultra high-quality chocolate with about 23% cocoa butter. The extra cocoa butter makes the chocolate thinner when melted, which allows you to get thinner, smoother shells on fruit, truffles, chocolate piping, &c.
You can buy it online, but it tends to be a little pricy. (I have seen it at the big fancy Whole Foods in Orlando.)
At home, you want to make sure you're using a nice chocolate bar (check ingredients to ensure it's made with real cocoa butter) chopped finely for melting & dipping. Chocolate chips have a low cocoa butter content, and also contain ingredients that help keep them from losing shape when baked, meaning they don't melt smoothly.
If after you melt you chocolate, it's still thick, a teaspoon or so of shortening can be added to thin it further. (The shortening imitates the extra cocoa butter in coverture chocolate.)
Finally, for dipped strawberries, I dip, then shake them a bit to remove the excess chocolate.

Once I get home, I've been wanting to do a chocolate post, teaching how to temper chocolate and how to make some chocolate goodies like truffles, dipped fruits and garnishes. Maybe I'll do a whole series of chocolate posts!

Well, it's nice to know I'm not the only person in the world with an allergy to eggs! People always look at me like I'm crazy when I tell them that. Although, I'm not so senesitive I can't have cakes and cookies and things, as you know. But, this sounds lovely.

I'm so glad you'll be home soon! I miss you!! And I know you are going to want to be spending tons of time with Kyle when you get back, we must get together for a girls night out at some point.
